Ampalaya With Pork

Ampalaya or Bitter Melon is one of the not-so-like vegetables specially for kids. The bitter taste basically gave it away. I used not to like it myself but I guess I outgrew it and now,it’s one of the staple vegetable in the fridge.There are several ways to get rid of the bitterness. What I usually do is to soak it with cold water with salt for at least 30 minutes prior to cooking,then rinse before adding it to the pot,and so far it works for me that even my youngest son was able to eat it.
Anyway, I only know how to cook it in a couple of ways, one with fish &black beans and then this,with Egg and Pork.

This is so easy to do anyway. All you need is;
Ampalaya (cut in thin slice)
Pork (cut in small pieces)
Egg (beaten)
Tomato
Onion
Garlic
Oil

And here’s how to cook it;
Saute the onion,tomatoes,garlic,then add the pork,cook it until it’s brown.Then just add the Ampalaya. Add a little water and cook for few minutes, then add the egg. Add salt & pepper to taste.
